Winnipeg’s renowned pop-up restaurant, RAW:almond extends its table to Riding Mountain National Park this fall. RAW:Wasagaming brings a 20-course menu to the shores of Clear Lake from September 29 to October 14. Learning through terrior, Chef Mandel Hitzer has dedicated himself to Manitoba cuisine. His 20-course menu features ingredients from across the province. Guests can expect the menu to be a symphony of flavours. The project's connectivity to nature remains front and centre with an eco-conscious focus throughout the food and design.
RAW:almond's award-winning designer, Joe Kalturnyk, leads the architectural design with repurposed wood from the region. The aim of the project is to leave as small an impact as possible using natural materials in the area and returning them to the land once the project is complete.
