Founded by father-daughter team Glen and Rachelle Demetrioff, The Forge blends Polish and UK beigel traditions into a signature style they call Polishire bagels. Developed through years of testing and travels to Europe, each bagel is shaped using the classic “poke and stretch” method for irresistible texture and flavour. Beyond classics like Cinnamon Raisin and Everything In, The Forge’s rotating menu pushes boundaries with creations such as Maple & Bacon, Cheese Fondue, and Banana Bread Chocolate Chip. Don’t miss the unique “open face specialties” featuring ingredients such as prosciutto, peameal bacon or wild smoked salmon. The Forge Bagel Co also offers a custom coffee blend – Anvil Espresso – which was perfected after months of tasting and is the ideal complement to a Polishire bagel.
